Flaky Roasted Tomato and Parmesan Tart

Can I just say that I love that so many of you share my love for roasted tomatoes. Those of you that still haven’t tried them, what are you waiting for? You really are missing out. So today we will be putting those roasted tomatoes to some use, that is if you didn’t eat them all yet.

Besides the amazing burst of flavors using the roasted tomatoes this way allows you to have a scrumptious lunch or dinner on the table with little effort. These roasted tomatoes tarts, galettes and/or crostatas are my cheat recipes that I often go to in summer or any lazy day of the year.

Well,unless they hate the taste of tomatoes and are like aliens from another universe. But seriously this tart tastes amazing warm out of the oven or cold straight from the fridge the next day. I typically serve it with a small salad and or a soup on the side for a complete meal. You could also just cut it up into small pieces and serve as an appetizer for a dinner party. See how versatile and easy this sounds?

The first is about the crust I use for this tart, I don’t make it from scratch. I prefer to use pastry dough that I buy from the grocery store. You will save time doing so but if you have a good pastry dough recipe then go ahead and use it. The other thing about the pastry dough is that sometimes I leave it as is laying up on the pie/tart dish and other times, like today, I push the sides down after I have laid the tomatoes inside. Again this is your choice and do as you like. The last thing is about the herbs that will go into the tart. Even though the roasted tomatoes have been spiced I love adding fresh basil or celery leaves to the tart before baking. Both taste great and give a different flavor. Now on to the recipe.

Easy roasted tomato tart that is perfect for entertaining or a quiet and lazy day at home.

Serves: 3
Ingredients
  • 1 package of pastry dough, rolled out
  • roasted tomatoes, I've used 19 here but use as many as you like
  • parmesan reggiano, sliced or grated
  • extra virgin olive oil
  • fresh herbs like basil or celery leaves
Instructions
  1. Preheat oven to 200 c / 392 and prepare a tart mold by buttering it and dusting it with a little flour, shake out the extra flour and set aside OR use baking paper to line the dish. Roll out the pastry dough,place and shape into tart mold. Use a fork to pierce small wholes around the raw dough then brush a thin coat of olive oil around the inside of the dough. Sprinkle the sliced or grated parmesan cheese around the dough, use as much as you like. Distribute fresh basil leaves or celery leaves around the dough again using as much as you like. Lastly arrange the pre-roasted tomatoes around the inside of the mold. Place the tomatoes in a circular patter and skin facing down. Lastly sprinkle with more fresh herbs and grated parmesan cheese.
  2. Bake in the center of the oven for 25-30 minutes or until the pastry dough has cooked through and is golden brown. Remove from the oven and allow to cool slightly before serving. Sprinkle extra grated parmesan and roughly chopped basil/celery leaves just before serving, optional. Makes great cold leftovers.

I would like to express my condolences to the families of the victims and survivors. It was one of the ugliest points in human history and one that will always be remembered. My heart goes out to all of you.  I sincerely hope that in the not to distant future human beings can finally stop all the hate, violence and killing of one another. May we one day get to a point were we can accept our differences and deal with it in better ways then the hatred and violence we’ve been using.

    This looks so beautiful and easy to prepare. I agree with you on the pastry. When you can purchase such good ready-made why bother making it from scratch unless it’s what you prefer. As always stunning photos.

    Hi Nancy! When I first saw the first picture, I thought your dough is homemade and immediately thought I can’t make it….but later as I read I realized you used the pastry dough!     I think this is my third time visiting the same post and every time I was about to comment, I got distracted! Just wanted to say that this has got to be the loveliest tomato tart I’ve seen in a while. Everything about it looks appealing, from the arrangement, the flavors right down to the textures.     What a gorgeous tart, a perfect use for these glorious tomatoes! I usually like pre-made crusts as well and make them only on occasion but this is more my food love style :) And as for the extra herbs, wish we had a thumbs up sign!

    Made this today after finding a great deal on tomatoes at Farm Boy. I happened to have taken some basil and tomato sausage out of the freezer yesterday. This is truly a company pie, delicious and quick to prepare. Yummy!
