Stuffed and roasted bell peppers are one of my favourite things to eat. But I honestly cannot remember when I last made them. Thankfully a beautiful display of bell peppers at the grocery reminded me of them.
One of the things I love so much about this meal is that it is so simple and easy to prepare. Once the filling is made you can stuff the peppers and throw them in the oven. While they are roasting you can clean up the kitchen mess and prepare any side dish you’d like to serve with the peppers. Another great thing about stuffed peppers is that you can prepare them ahead of time so they’re ready to go for busier nights. Lastly, I love that you can transform them into so many variations depending on what it is that you have in your refrigerator.
