Did you all have a great Thanksgiving holiday? I hope you did. My husband and I got to celebrate it for the first time in a very, very long time, and it was fantastic. But now that that holiday is over we’ve been gravitating towards healthier and lighter meals — at least until we eat our Christmas dinner in a few weeks.

This fried rice recipe is one I’ve been making for a while now. Being that we live by the sea, we have endless access to freshly caught shrimp. So of course we take advantage of that as much as possible. Did you know that shrimp are very low in calories and fat? They are very high in protein and so help to keep you full but without too many calories. This is a very good thing particularly during this indulgent time of the year.

My recipe uses brown rice which not only gives the dish a nuttier taste, but it also makes it more nutritious. Additionally, I’ve loaded it up with several different vegetables — don’t you just love tons of veggies in your fried rice? There’s also a seasoning that gives the recipe a really delicious flavour. Plus lets not forget the fresh herbs, cilantro and Thai basil, which really take the fried rice to a new level.

    Love fried rice! And we just happen to have some leftover rice in the refrigerator. Definitely a sign. :-)
