Pineapple and Chia Smoothie
Pineapple and Chia Smoothie (licuado de piña y chia) will keep you feeling refreshed and satisfy your thirst. A super healthy and delicious recipe!
Recipe type: drink, vegan, smoothie
Cuisine: Mexican, International
Serves: 4
  • 600 gm or 1.32 lb of fresh, peeled pineapple chunks (use a yellow tropical/Caribbean variety)
  • 125 ml or ½ cup of filtered water
  • ½ tbsp chia seed
  • 1 small lime, juiced (optional)
  • ice cubes, to serve
  1. Place everything in the blender and blend until smooth. This will yield a thick smoothie, you can add more water to water down if desired. Taste and if you feel the need, add sugar, stir and allow it to dissolve into the drink before serving. Serve over ice cubes.
• Please notice that I used a Caribbean pineapple variety, I strongly suggest you choose a sweet variety available to you. Hawaiian pineapples have a very pale yellow flesh and are not as sweet. If this is the only pineapple available to you then you might want to add a sweetener.

• In place of water you can use cow milk or a non-dairy milk. I've only tested the recipe with water, and it's what I prefer.

• For a super cold version you can add ice to the blender.
