Not only is this a nutritious and low fat recipe, but it’s also easy, fast and vegan. Tofu burgers make a great light lunch and I bet you have all the ingredients in your kitchen.

Your ingredients:
50 grams tofu
half a small bell pepper finely chopped (what ever colour you prefer)
10 grams (about 1/8 cup) of onion, finely chopped
50 grams (about 1/4 cup) bread crumbs, plus extra as needed
1 teaspoon soy sauce
1 pinch each of salt, ground black pepper, garlic powder, oregano, dry basil, and ground cayenne pepper for a spicy touch
Instructions:
1. In a large bowl combine tofu, bell pepper, soy sauce and spices. With your hands keep mixing the ingredients until the tofu breaks up.

2. Start adding the bread crumbs to the mix and throughly combine all the ingredients. Add as much bread crumbs as needed until the mixture sticks together so that you can form your patties and they don’t fall apart. If you need to, add a little splash of water to the mixture to help it become stickier.

3. Add about one Tablespoon of vegetable oil to a frying pan, and once warm add your patties and cook on each side for about 6 minutes or until they are brown on both sides.
You can serve on a hamburger bun or serve the patties with a small salad. I like to eat mine simply one a slice of lightly toasted whole grain bread and a small green salad on the side — so delicious!

If anyone has a tofu burger recipe you’d like to share, please do so. I would like to experiment a little more with them.
