Recipes For Lent or Recipe For The Weekend

March 9, 2012 by Nancy Lopez-McHugh 38 Comments

I have a complaint to make. Someone stole my Wednesday and Thursday. The sneaky thief snuck up and stole two whole days from me. Is there a place to file such complaints?

Anywho, I don’t know where the week went. So instead of having a fresh new recipe for you today I have some Lenten suggestions. Today is Friday and Christians around the world are fasting for Lent. Though I am no longer a Christian I grew up observing Lent. Christians do not eat meat on Fridays during Lent. Fridays In my parent’s house, during Lent, often meant a seafood dish for dinner. My mami’s seafood dishes are fantastic so I always looked forward to Fridays. That is probably the thing I enjoyed most about the holiday. Hey I never said I was a good Christian.

I leave you with some non-meat seafood and vegan recipes. Even if you are not observing Lent these recipes are all fast and easy to prepare. Perfect for the weekend! Have a great Friday everyone and I’ll see you on Sunday for Sunday Snapshots. Adios amigos!

Wonderful collection! :) I adore fish, so for me Friday’s were never a bad thing, either, during Lent.

I didn’t give up chocolate, sugar or booze, damn I better run over to confession. He He. When I run into that thief I’m gonna give him a talking to, my whole week got stolen. I didn’t manage to get a cake made yesterday and I have to get in there and decorate it right now. How you get in a little relaxing over the weekend. It’s my final packing weekend, that’s why I need the sugar and booze. lol.

Great collection of recipes – especially love the vegan options. :) The Thutilinanga Indonesian Chili Fried Eggplants/Aubergine looks delicious, I wonder if you could use egg substitute with success in that one?

      Hi Anna,

Good luck with your transition. Going vegetarian does in no way mean that you won’t be eating well. I love vegetarian food and cook it often. Also make sure you check out The Ardent Epicure.com for great vegetarian recipes.
