I have a complaint to make. Someone stole my Wednesday and Thursday. The sneaky thief snuck up and stole two whole days from me. Is there a place to file such complaints?
Anywho, I don’t know where the week went. So instead of having a fresh new recipe for you today I have some Lenten suggestions. Today is Friday and Christians around the world are fasting for Lent. Though I am no longer a Christian I grew up observing Lent. Christians do not eat meat on Fridays during Lent. Fridays In my parent’s house, during Lent, often meant a seafood dish for dinner. My mami’s seafood dishes are fantastic so I always looked forward to Fridays. That is probably the thing I enjoyed most about the holiday. Hey I never said I was a good Christian.
I leave you with some non-meat seafood and vegan recipes. Even if you are not observing Lent these recipes are all fast and easy to prepare. Perfect for the weekend! Have a great Friday everyone and I’ll see you on Sunday for Sunday Snapshots. Adios amigos!

Hi Rosa,
Thanks! I know, way too fast. Have a great weekend :)
Thank you Nancy for publishing this. I am always on the look out for Lent recipes. Yours looks very tasty. Thanks for sharing with us.
Thanks Veronica!
Just goes to show, you can eat very well without meat!
Absolutely ;) We really enjoy our meatless meals year round.
Like you I don’t do Lent (or any other religious observance for that matter) but good food? That is ALWAYS on my schedule! These are great recipe inspirations, and as you know I could use a little of that lately! : ) Happy weekend
Lol Trixie :) Happy weekend to you as well!
Wonderful collection! :) I adore fish, so for me Friday’s were never a bad thing, either, during Lent.
Ah, I see we have something in common Kiri :) Thanks and have a great weekend!
Thru blogging, its not only food recipes but we also learn about different traditions. I am not a complete vegetarian but try to include more veggies in my diet. Check all your recipes this weekend.
Thank you !
I didn’t give up chocolate, sugar or booze, damn I better run over to confession. He He. When I run into that thief I’m gonna give him a talking to, my whole week got stolen. I didn’t manage to get a cake made yesterday and I have to get in there and decorate it right now. How you get in a little relaxing over the weekend. It’s my final packing weekend, that’s why I need the sugar and booze. lol.
-Gina-
Phew, so glad you didn’t Gina. How would you be dealing with the move without all of those? lol. Well at least it is the last packing weekend, soon you’ll be chillaxing in your new house ;)
Great collection of recipes – especially love the vegan options. :) The Thutilinanga Indonesian Chili Fried Eggplants/Aubergine looks delicious, I wonder if you could use egg substitute with success in that one?
Thank you Heather. It really is delicious, its one of our favorites. I’ve never used egg substitutes so I don’t know. Try and see what happens:)
Nice round-up of recipes. I just checked out the lovely Turmeric Rice and the Bulgur Eggplant Pilaf. Both got earmarked. Thank you , Nancy.
Hi Victoria,
Thank you! I hope you get to try them both.
I just adore your photographs and find them inspiring. I am still learning and hope one day to come half way close to the quality and atmosphere in yours.
Hi Suzanne,
Thank you:) Just keep learning and practicing, you’ll get to exactly where you want to be. It took me time and lots of practice and I still try to learn something new often.
Nice round up, Nancy! I know what you mean – where does the week go!? Thanks for sharing this, and have a great weekend! :)
Hi Marsha,
I wish I knew, hehe. Thanks and you too have a great weekend!
oo i am not catholic but this actually works really well for me! i am gradually going vegetarian, and in a week or so i plan to give up chicken and subsist on fish as protein for the next month or so (then give that up too). so perfect! thanks!
Hi Anna,
Good luck with your transition. Going vegetarian does in no way mean that you won’t be eating well. I love vegetarian food and cook it often. Also make sure you check out The Ardent Epicure.com for great vegetarian recipes.
As always such pleasure to visit your blog – great collection here. I don’t know many of your old recipes, so this is a nice way to check your archives. Have a great weekend!
