Portobello Mushroom Burgers and December’s YBR Signup

December 17, 2012 by Nancy Lopez-McHugh 27 Comments

Portobello Mushroom Burgers by Spicie Foodie

The last couple of weeks left in the year are busy times. Many are preparing for Christmas and New Years celebrations. With all the party planning, present shopping, wrapping, and parties to attend many of us are left with little time for healthy meals. Today I want to share a meal that is super easy and fast to prepare.

Portobello Mushroom Burgers by Spicie Foodie

These vegan “burgers” are made using large portobello mushrooms. They can be topped and served with any of your favorite burger toppings and side dishes. I love cheese (thought that excluded them from the vegan category), grilled onions, tomatoes, and chile peppers on my burgers. That is what you see in the photos. There really is no recipe to this recipe. Basically all you do is grilled the portobellos until they are soft. The time will depend on how large and thick the mushrooms are.

I’m going to upload this no-recipe recipe to the recipe page so that you can print it out and save the idea for one of your busy days. Enjoy!

Portobello Mushroom Burgers by Spicie Foodie

This is one of my favorite meatless meals. In fact portobellos are a great option for eating healthier and for meatless meals. These burgers go great with a side of Spicie Roasted Potatoes. If you don’t fancy a “burger” check out my Grilled Portobello Steaks (Vegan) or Jalapeno Portobello “Steak” Wraps (Vegan with Beef Steak Option)

I love portobello burgers too. I wish I could find the mushrooms here. I see their smaller cousins, which I guess I could turn into a burger, but it wouldn’t be the same. Although now you’ve got me thinking….

I often make these in the summer when my vegetarian friend comes over but we want BBQ. It is very delicious and quick. Time savers are perfect now but I would have to bbq in the snow :-D
