Happy Sunday everyone! As you can see instead of snapshots I have a recipe for you today. It’s been a very busy week with little spare time. On top of that my husband has been ill with a cold and I’ve just begun feeling the effects. I’m hoping I can will it away…we’ll see what happens. So because I’m not feeling too good right now I’m keeping it super short.
Turmeric Spiced Bulgur

A vibrant bulgur recipe flavored with turmeric, parsley and lemon. Delicious as a side dish or vegan main course.

Ingredients
- 1 cup or 180g coarse bulgur*
- half of small onion, finely chopped
- ¼ tsp granulated garlic
- ½ tsp ground turmeric
- salt to taste
- 1-2 tbsp olive oil
- 2 cups low sodium vegetable broth or water
- large handful of chopped parsley**
- 1 small lemon, juiced
Instructions
- Heat the oil in a saucepan, once warm add the onion and saute until soft. Next add the bulgur and cook for 3 minutes while stirring often. Add the garlic and saute for another minute, then add the turmeric and mix into the ingredients. Pour the broth and salt into the saucepan. Cove and simmer under low heat for about 15-20 minute or until all of the liquid has been absorbed.
- Right before serving toss in parsley and pour in lemon juice. Gently stir until well combined. Serve as side dish or vegan meal.
Notes
*The recipe can also be made using rice.
**Fresh cilantro or chives may be used in lieu of parsley.
• To give the bulgur a spicy touch you could add some finely chopped chiles or some ground chile powder or red pepper flakes. The spicy ness works great with the flavours in the recipe.

I just sprinkled turmeric on my morning fried egg because of its wonderful healthful properties and then read your post with turmeric. It also gives such a beautiful colour to food. I hope that cold doesn’t catch hold and that you escape it. The turmeric might help.

For some reason I don’t use bulgur that often, but I definitely should, and this would be a wonderful way to prepare it. Hope you’re not getting the cold, of if you do, that it’ll be a short one.

Oh no I hope your husband will recover quickly and you are keeping sickness away. With two kids in school it’s almost impossible to keep sickness away during cold months. Love bulgur..just made some Frikadellen with ground meat and bulgur. Turmeric gives it such a bright and beautiful colour and flavour.

What a beautiful, simple, healthy dish. I love bulgur and I love tumeric, and this combo sounds awesome. I’m thinking that this dish topped with a few sliced almonds and a dollop of Greek yogurt would make a fantastic dinner.
