By now, I believe, everyone has heard of the Meatless Mondays initiative. I have been a fan of it and now and then I like to share recipes so others can also go meatless on Mondays. Also there are often misconceptions that meatless, vegetarian or vegan meals are flavourless, boring and not nutritious — this couldn’t be farther from the truth. Today I’m going to share 10 recipes that you can enjoy on Meatless Mondays. Pair them with other meatless options or enjoy them on their own.
In case you don’t know about Meatless Mondays here is some information, “Meatless Monday is a non-profit initiative of The Monday Campaigns, in association with the Johns Hopkins’ Bloomberg School of Public Health. It was started to reduce meat consumption and in turn helping both the environment and individuals improve their health. By cutting out meat once a week, we can improve our health, reduce our carbon footprint and lead the world in the race to reduce climate change.” Source meatlessmonday.com

I can’t eat meat 7 days a week; most of the time we go meatless at home. It’s a happy balance for me to eat mostly vegetarian then add the meat to the rotation when the craving strikes.
Lovely selection of meatless dishes here–I admit I tend to go the easy, stir fry route so thanks for the ideas and for including my sting beans!

‘Meatless Mondays’ does alliterate beautifully :) ! Although I was very much brought up in a heavy-meat=eating environment MM these days is not enough! I manage at least 2-3 days a week with a meatless main course and am finding more and more ways to make these memorable, healthy, tasty and good for the environment. You have a lovely list up above: some I have already made, some are delightfuly new and will be tried, especially that mushroom galette :D !

this is fantastic! i’ve been trying really hard to eat less meat lately, it’s so hard to change habits once they’re ingrained! a lot of good ideas here.

I s0 totally agree with you Nancy. We dont seem to eat a lot of meat any more in our house, most certainly not every day and I like it to be sourced inhumanely if I can. Thanks for the collection of recipes. A nice surprise to see mine included when I am so far away in a tiny town in Italy trying to stay in the wi-fi zone!

We rarely eat meat too..My husband does need to eat it for health reasons..so we do eat it some..but mostly fish here..:)More than meat that is for certain..

I love the idea of meatless Monday.. but I live with two carnivores (hubby and son) and I would not get away with it. Now my daughter is starting to dislike meat… so I may have to have both options available soon enough. :)
That’s too bad Ramona, I’m lucky because my hubby never complains about meatless meals. Maybe you and your daughter can compromise with the boys?:)
