Since people all over the US and some parts of Mexico are gearing up for Cinco de Mayo fiestas, I thought I’d share 58 Mexican recipes to get the party started. Because I now live in Mexico it will be very interesting for me to see how the real locals in Playa observe the holiday — that’s if at all. I’ll report back if we end up attending a fiesta at the city’s main square.

Wow, nice compilation. I’ve never really been a big proponent of celebrating Cinco de Mayo here in Washington state (unfortunately it’s mostly bad margaritas and fratboys doing shots in sombreros and the like) but I’ll check some of these out for another occasion!
I’m not sure where to begin. I’ve already made the Enfrijoladas de Pollo and they were delicious! I have a bag of flour tortillas in the fridge that either need to be frozen or used so I think the tortilla chips will be the next one to try. What a great list Nancy! Thanks!

This is a great reference for next year as well as every time I want Mexican food. There is so much more than tacos to experience!
