Sautéd Snow Peas with Green Pepper and Chile Flakes for #MeatlessMonday

The past two months have been busier than ever. But I cannot complain, it’s been a very good kind of busy, and I’m thankful for it all. I pour a lot of work and passion into this blog of mine, I now have my Spicy Food column on About.com, we have our three gorgeous fur babies to care for, and slowly we are making our house a home.

I’ve been getting to do things I have never done before. They’re not adrenaline fuelled adventures, but still fun nonetheless. My favourite activities right now (besides going to the beach and eating Mexican food until I literally can’t take another bite) all involve our home. Basically all of my husband’s and my free time are dedicated to home improvements and decorating. We have many plans and ideas of what we want our house to not just look like, but most importantly, feel like. We are slowly but surely getting there.

Even though times have been extra busy, I still love to cook and take photographs. But right now I’m opting of for more quick and easy meals. The other day I was craving a vegan lunch that wouldn’t take too much time but that was still healthy. I prepared this easy sauté (or stir fry) with just these two vegetables: snow peas and little Gernika peppers. The recipe doesn’t call for too many ingredients but it is quite pack full of flavours. I served it with steamed brown rice for a meat free meal. Since we had some leftovers the next day I served them as a side-dish to grilled fish. You can go the vegetarian way (maybe even add some tofu or mushrooms for protein) or serve with whatever meat you’d like.

Am kind’of lost when snowpeas have finished in my fridge! How can one do the next stirfry :) ? Love the flavour, fibre and goodness they harbour! Have not been as pepper-fixated and loving the taste and flavour I surely shall try!

This would be a nice change of pace any day of the week. Making your house a home is not an adrenaline filled adventure but it’s one of the most rewarding things you can do. Have fun!

What a spicy sounding snack! Although these may be too spicy for me, they’re a great snacking alternative!
