They say that February is the coldest month of the year (in the Northern Hemisphere). I know many of you are ready for the month and winter to be over and done with. Good news, we’ve already passed the halfway point in February and technically speaking, the Spring Equinox is in 31 days. Hopefully spring arrives early for those of you going through the tough winter this year. But while you wait for warmer spring days I have a delicious soup that will keep you full and toasty.
Even though we don’t have the harsh winters here in the Caribbean, we do have the occasional cool night — and I love dinning on soup those days. A few nights ago I prepare another pot of this peppery soup that I love so much. It’s really simple to prepare and if you’d like you too may serve it alongside plain cheese quesadillas like I do (The green tortillas are made with nopales or cactus paddles. They’re store-bought.) I love this pairing but if you don’t have tortillas feel free to make grilled cheese instead. Either way, I hope you find the soup as delicious as we do.
Well, early autumn just may be around the corner for us but I have never minded this kind of soup in the warmer months: appetizing in appearance, full of healthy goodness and easy to make! I love pepper but am already thinking of other ‘peppery’ ingredients I could try as a substitute! Different take: lots of ideas :) ! Hope you have a lovely, early spring!!

Harsh winters… Urgh… I am so tired of winter! I want spring to be sprung so I can stop hibernating. I can also eat a gallon of this soup! :)
