One of my husband’s absolute favourite vegetables is eggplant. I like it a lot too, but he could eat it just about everyday and not get tired of it. Needless to say, I try to create different recipes so we can enjoy eggplant often and not get bored. This very simple eggplant dish you see here is super easy to prepare, and so darn delicious that you can eat it over and over and not get tired of it. The recipe uses only a few ingredients (which you probably already have in your fridge) and in about 20 minutes it can be on the table. Another great thing about this eggplant salad is that you can serve it hot, warm at room temperature or cold. It goes great on the side a fish or chicken main dish. And now that the weather is warming up for many of you, you can bring this salad along on a picnic or a cookout party.

Congrats to MJ! I have a like/dislike relationship with eggplant. I adore it on pizza when it’s smothered in a rich sauce and tons of gooey mozzarella. Good to me, yes. Good for me, not so much. I am however willing to venture out of my eggplant comfort zone and try something different.
