I don’t ask much when it comes to hamburgers. I really only have two requests: The patty should be super fresh and tender so that it doesn’t feel firm when I bite into it. (I can’t stand a hard hamburger patty). Second, please don’t over toast the bun. I can’t tell you how many times a hamburger was ruined by a crunchy bun. Unfortunately, these two things is where so many burger joints go wrong. This is why I so really order hamburgers, and when the craving strikes I prefer when my husband makes them at home.

When my husband cooks a hamburger for me I know that the meat will be fresh, and so tender that it crumbles in my mouth with each bite. He has a special technique for putting the hamburger patty together so that he can achieve that tenderness. He also tells me that the reason why so many restaurants end up with that firm burger meat is because of overworking, or compacting, the meat. That’s the secret to his hamburgers, un-compacted patties.

A couple of days ago we were discussing hamburgers and I told him about wanting to create a spicy one for my column. Immediately he came up with this amazing burger — I could tell it was going to be really good even before he cooked it. He christened his latest burger creation the Tropical Fire Bacon Cheeseburger and it is spicy, smokey, and sweet too — it’s a winning combination of flavours. Plus, the patties are so tender and just melt into your mouth. The recipe has a few twists in it, more than you’ll notice just by looking at the photo.

We are always very honest with each other, and if we don’t like something the other one cooked, we tell them. But this burger, oh this burger! I loved it so much that my mouth is watering just writing this. Since I love to try new flavours this is exactly the type of hamburger that I can get excited about. I’ve made him promise me that he’ll be making it again this weekend — how super lucky am I to have a man that cooks, and one that is good at it too!
