This Mexican girl loves her beans — I know, I know, what a surprise. (Haha)

But seriously, beans are amazing, wouldn’t you agree?

For me growing up beans were always a side dish or something you ate between a warm tortilla. Lately I’ve been really getting into experimenting with all the ways that you can eat beans, and this dish before you is my latest creation. It is a very basic dish that is loaded with an assortment of veggies (like whatever is in your fridge right now), hearty white beans, and spices. It’s so easy to put together and you can eat is as a meat free main dish or as a side too. Click below to go get the recipe and enjoy!

    I have to say, I don’t like the about.com website. I must be missing it…I can’t find the print option for the recipe. I much prefer getting the recipes from your blog.

    For some reason I bought several cans of white beans a few months ago. Guess I was anticipating a beautiful dish like this I could use them in.
