For me growing up beans were always a side dish or something you ate between a warm tortilla. Lately I’ve been really getting into experimenting with all the ways that you can eat beans, and this dish before you is my latest creation. It is a very basic dish that is loaded with an assortment of veggies (like whatever is in your fridge right now), hearty white beans, and spices. For some reason I bought several cans of white beans a few months ago. Guess I was anticipating a beautiful dish like this I could use them in.
