Cloudy Brain Matcha Latte, Sweetened with Dates
My brain feels cloudy. I feel like the, everlasting, overcast winter skies have made their way into my brain. Perhaps it happened when I took a deep breath whilst on a quick walk to the market. Yes, the clouds went in through my nostrils. I knew I shouldn't have left my winter cave. As the clouds made their way to my brain they left a few stragglers in my nose. I think I inhaled way too many grey clouds. They make themselves at home while I imagine my head exploding like a piñata from the ... read more

Matcha Blueberry Corn Muffins, a real treat
I must admit ... I have a new addiction, Match Tea. There's no other green tea quite like Matcha, both in the taste an versatility of uses. We all know how we can simply just enjoy a cup of Matcha and be fully satisfied and content. In Japan the tea is also used in an assortment of sweets like ice cream, cakes, cookies, breads, mochi, chocolate and candy. ( By the way Matcha candy is energy boosting and really tasty.) I love this tea so much, if you remember from a previous post I told you guys ... read more

Why You Should Be Massaging Kale
Put some music on, pour yourself a big glass of wine, grab the oil, and get ready to give your fingers a workout…Now, now, get your mind out of the gutter, and don’t forget to reach for the kale. A sentence with the words "massage" and "kale" sounds a bit strange, doesn't it? Why would one need to give a vegetable a massage? Simply put, it makes all the difference. Kale, as you already know, is a thick, tough and fibrous leafy green; If you take fresh pieces of kale and toss them into ... read more

Chocolate, Coffee, Pecan Shortbread Cookies
It's Monday. I don't think many of us have much love for Mondays, but perhaps if Mondays were declared "cookie days" people wouldn't mind them so much. Maybe the first day of the work week would be a little bit more bearable. What do you think? These buttery and crumbly shortbreads were made with Mondays in mind, you know with a little extra kick to help us get through the day. Yes, the day because you'll want to have a couple of them for breakfast. It's Monday and no one will judge ... read more
Spicy Goat Cheese, Pecan and Paprika Shortbreads
I have a weakness for French cheeses. This wasn't always the case, in fact I used not like cheese very much. Being Mexican cheese is not something we eat often or much of. Contrary to the inaccurate impression many have about Mexican cuisine, you'll find that in our authentic cookery cheese is using sparingly. Growing up my parent's only bought a couple Mexican cheeses that we occasionally used for quesadillas or to top chilaquiles. So needless to say, when it came to cheese my experience was ... read more

Kitchen Know-How: How To Shred Beef and May’s Taste From The Past
Some of you may be thinking what a silly subject to do a "How To" post on. Shredding beef, or any other meat, is not Rocket Science, I know. So why am I writing a tutorial? Because the method I use saves time. Finding a quick shredding method is particularly important to me when I cook Mexican food. Authentic Mexican food can be quite time consuming, so you want to find some shorts cuts. This nice and greyish beef was boiled, and although it has been boiled for a few hours it can still be ... read more

Sunday Snapshots: Cha Soba
Cha means tea and Soba means buckwheat in Japanese. These are buckwheat noodles flavored with tea. The tea used to flavor and color these noodles is Matcha. Sometimes you'll also see these noodles referred to Matcha Soba or Green Tea Soba. Matcha is my favorite green tea, I love love it. So when I saw these noodles I had to buy them. The easiest way to prepare Cha Soba is to first boil the noodles, drain and rinse with cold water. Serve cool with some soba dipping sauce. Alternatively ... read more
