Hola amigos! How is everyone doing? Great I hope. I want to apologise for my absence and lack of new recipes, but there is a good excuse. After a couple years of (quietly) planning these past several months have been super busy and exciting for my husband and I. So much has been happening that wow, where do I begin... Na shledanou Praha! As many of you may be aware, the golden city of Prague (in the Czech Republic) is where I made my home for some years. Living in a fairytale-like city ... read more

Sunday Snapshots: Postcards From Prague No. 6
Taking a walk around Prague inspires me to snap photos of the things I see. It's just such a gorgeous city. Around every corner, passage and courtyard there is something new to discover. Mostly I try not to be distracted by capturing "the perfect" shot and really enjoy the moment. I never want to become a person that misses the real world around them because they are too busy capturing it through their camera's lens or phone's view screen. In the countless walks I've been lucky to digitally ... read more
Sunday Snapshots: Postcards From Prague No. 5
My mind is a dizzying whirlwind right now. I've had so much going on these past two weeks and unfortunately it meant that I've been neglecting my blog. Besides finishing up the book there have been several technical problems to take care of. Which by the way has left me exhausted. Anywho, I'm planning on getting back on track with steady posts and catching up on all of your blogs. I'll have more news to share very soon, but in the mean time I leave you with these snapshots from ... read more
Sunday Snapshots: Postcards From Prague No. 4
Today on Sunday Snapshots I'm taking you on a mini tour of Prague. Prague is one of the most beautiful cities in the world. Every corner you turn, building you look up at, side walk or street you walk down has an intriguing detail. When I go for a walk around Prague I like to imagine all the history that happened in the places I am seeing. I imagine what it was like during different periods of time, what were peoples lives like. It is easy to get lost and caught up in both the history and the ... read more
Sunday Snapshots: Postcards From Prague 3
*Please excuse the photo quality, they were shot on my phone's camera.* I'm back from my spring break, it was great. I feel refreshed and excited to get back to blogging. It's really amazing how great you can feel by taking a week off. Perhaps my favorite part was the technology disconnect. I cut down my internet time to about 20% of my normal use, and it was fantastic. Try it, you'd be amazed at how the your life and world still function without the technology overload:) I thought I'd ... read more
Sunday Snapshots : Postcards From Prague 2
Wether traveling to a new city or staying right in our own neighborhoods, my husband and I love exploring our surroundings. To us there is no better way to take in the history, culture, architecture and sheer beauty of a place. Exploring has always been one of our favorite pastimes. Perhaps it is no wonder that we have lived in so many cities and places. Adventurers at heart we are. Often times when I need to refresh or distress an exploratory walk is the only cure. My favorite walks are ... read more
Postcards From Prague: Last Days of Summer
I'm what is called a shutterbug. I love pointing my camera and shooting anything and everything that catches my eye. I love caring my little compact point and shoot camera everywhere with me. What can I say, I just love photography. We are lucky to have the opportunity to travel, see and have extended stays in many beautiful cities. One of those cities is Prague. This golden city, city of a thousand spires with it's tumultuous history and stunning beauty is one that should be on everyone's ... read more
Dark Chocolate Chip, Pepita and Chia Seed Granola
Granola is a huge favourite in my house. Often times my husband and I just eat it by the handfuls -- of course, we also eat it in a bowl with milk or yogurt just like other (civilised) humans. When we lived in Europe we had our favourite brand of granola (and muesli) that we always purchased. More times than not we bought the chocolate flavoured one. The morsels were brown like chocolate and it had chunks of chocolate throughout the mix -- it was chocolate heaven! It also had these huge clumps ... read more
Little Cheese Cubes Marinated in Spiced Oil
Cheese is one of my weakness, it's difficult resisting it. The first time I ever tasted marinated cheese was in a pub in Prague. To say that I devoured it is putting it politely. The cheese was a local variety, that is similar to feta, and it was in a light olive oil with several spices. The delicious creamy and salty taste has stuck with me ever since. But nowadays, I love making my own variations of marinated cheese. It is so much fun experimenting with different spices and even cheeses. ... read more
Sunday Snapshots: Eight Pictures of The Beach
Happy Sunday amigos! It's been a while since I've shared some beach pictures and wrote a Sunday Snapshot post. Well, today I'd like to share with you these eight pictures of the beach. I am super blessed to call this magical place, Playa Del Carmen, my home. And no matter how many times I walk along the beach, it never gets old. The gentle and cooling breeze, the salty air, the sand between my toes, and the waves crashing along the shore. How could anyone grow bored of this. Never. When ... read more
Sunday Snapshots: Catching Up
I haven't share a Sunday Snapshots with you in a while, a very long while. So today I'd like to catch up on some snapshots. They are photos that I've shared on Facebook and just forgotten to also share them here. Enjoy! This stack of plates and bowls are traditional Mexican terracotta pottery. They are so simple and, I don't know why but, I love eating from them. I purchased the whole stack for $100 (Mexican Pesos), that's less than $7 USD or 6€. In other words, a super bargain. I'm going ... read more
Things I Loved (and Ones I Didn’t) This Week
Every once in a while I like to share things I'm currently loving, today is one of those times. But I also want to share one thing that I didn't care for this week. One thing that I really loved this week, and every week I've lived in this apartment, is the view and light from my balcony. I may not love this apartment but I do the beautiful light shadows that shine in just about everyday. Those trees look calm but it's like a small zoo out there -- more on that another ... read more
Chicken and Swiss Chard Tacos | Tacos de pollo deshebrado y acelga
Since arriving in Mexico I've had so many new ingredients to try out. Some are ones I never cooked with but remember from my childhood, and others are ones I have never tasted before. Swiss chard is one such ingredient. I had heard about it on many food blogs but never came across it when I lived in Prague. Actually, when I purchased my first bunch here a couple of weeks ago I had no idea what it was until I got home and Googled the name in Spanish. Of course I was super excited to finally have ... read more

Czech Roasted Duck: A Christmas Tradition
All families have traditions that are passed down from one generation onto another. Holiday traditions are perhaps the ones that stick with us the most, for me they are the ones that cling to my memories and heart. In my Mexican home we incorporated our traditions with ones from our new adopted land; alongside our tamales sat an American style roasted turkey. Eventually both tamales and turkey became staples on our Thanksgiving and Christmas tables. In my family some traditions, like ... read more
Bramboračka: Czech Potato Soup with Wild Forrest Mushrooms for #MeatlessMonday
I’m sitting on my balcony this bright sunny day; it’s only 11 am and the temperature has already hit 27°C (81°F). I’m wearing shorts and a thin tank top, beside me is a glass of ice-cold water pouring condensation down its sides. The only sounds I hear are the palm and tree leaves swaying with each gentle breeze. Now and then I hear calls from Great-tailed Grackles that live in the trees nearby. A setting which has now become normality, yet one quite different than the last time I made a pot of ... read more
Caribbean Yellowtail Snapper: Cooked with coconut oil, serrano peppers, garlic and served with corn tortillas
Our last months in Prague were a whirlwind of activity with preparations for our move to Mexico. Those busy weeks my time in the kitchen was limited to quick breakfasts or the occasional dinner. Our days started early and ended very late; you can imagine that gathering the energy to cook was a difficult task for me. Luckily we were able to rely on great cafes and restaurants in the (old) neighbourhood to nourish us. The last time I cooked a real dinner was two months ago. You know, one that ... read more
Curried Spicy Chicken and Basil
When I lived in the states there was this killer Thai food restaurant I would eat at a couple times a week. It was close to where I worked, the prices were great, and the food was fantastic. The restaurant was a mix of Asian cuisines but my favorites dishes were always the Thai ones. The restaurant is also where I first tried Thai basil chicken, and I loved it. Since moving away I've tried to recreate that spicy dish I loved to eat. Though my recreation always tasted great I unfortunately ... read more

But before we get to the yummy food pics I want to thank you. Your sweet comments and well wishes regarding our move, from Europe to Mexico, made both my husband and I smile. We are super excited and it's going to be great sharing our adventure with you. (Please excuse the not-so-great quality of the photos; they were shot on a ... read more
