In my area of the world tomato season is sadly drawing to an end. During the off season tomatoes are imported from other parts of the world, but those don't compare to locally grown ones. It will be a while before I find plump, juicy, vibrant tomatoes like these beauties. Around here gourmet and heirloom tomatoes are rare to come by even during tomato season, and unfortunately the off season means dull and bland options only. How could I not seize the opportunity to bring some of these ... read more

Creamy Polenta with Roasted Vegetables and Garlic Creamed Spinach
January's healthy eating theme continues here on Spicie Foodie. Today I have another healthy recipe loaded with veggies. The dish consists of creamy polenta topped with garlic creamed spinach and roasted vegetables. What is Polenta? In modern day cookery Polenta is the Italian word for coarsely ground (yellow) cornmeal. (Don't confuse it with corn flour) It can be cooked with either stock, milk, or water to make a thick porridge. Additionally it can be baked, grilled or even fried. The ... read more
Roasted Spanish Pumpkin and Red Pepper Soup (Vegan)
These cold dreary days of late autumn have me longing for the warm blue skies of summer. When the days are long and the soup is cold rather than hot. When tomatoes glow red, are juicy, ripe and ready for a refreshing bowl of gazpacho. As I write this my mind wants to escape with a trip to Malaga for some authentic gazpacho. Sigh... It will be a while before those sweltering days return, and for now I'll have to suck it up and make the best of it. One way I'm doing so is by trying to bring ... read more
Roasted Turkey in Tomato Chipotle Sauce and Cinco De Mayo
There are days when even those of us that make a living off of food don't feel like cooking. There I said it. Those days may also include not wanting to reach for your camera, forget about trying to setup a nice setting in which to photograph the food. On those days you may even turn down the offer to go out for dinner because the idea of putting yourself together for the outside world seems like too much work. On those very same days that I don't feel like cooking, but still have to put ... read more

Roasted Tomato and Gouda Strudel
Today I have the final roasted tomato recipe to share with you. I actually have more recipes in which I use roasted tomatoes but I don't want to bore you with non-stop roasted tomatoes. I'll save them for later on in the year. Anyway back to today's recipe, it is a savory strudel. The word strudel is German and it defines a layered and typically sweet pastry, but savory strudels also exist. Perhaps the most common sweet strudel is Apfelstrudel or apple strudel. Who doesn't love a warm ... read more

How To Roast Tomatoes
Tomatoes are a fruit, bet you thought they were vegetables. It is a common misconception. Botanically wise they are a fruit but for culinary purposes are considered a vegetable.Tomatoes originated in South American then were spread around the world after the colonization of the Americas by the Spanish. Kind of weird to think there was a time when Italians didn't have tomatoes for pasta sauce, isn't it? " In certain areas of Italy, such as Florence, however, the fruit was used solely as a ... read more

An Apple A Day and Spicy Apple Goat Cheese Galette
There is a proverb that says, "An apple a day keeps the doctor away." A few days ago and for some strange reason this proverb kept repeating in my head. Every time the phrase repeated it made me wonder if indeed apples keep us out of the doctor's office. If so then I'm in dire need of a doctor. The only way to quiet the annoying repetition was to learn the proverb's origins. I've only heard Americans saying this and so I assumed it was an American phrase. But a little investigating concluded ... read more

Smoked Mackerel Salad and August YBR Signup
It's too hot to turn the stove or oven on. Our temperature reached 38˚C or 100.4˚F today, that is really hot for Prague. Many people in Europe do not have air conditioners in their homes, in fact I don't know anyone that does. Thankfully many of the old European stone and brick building stay cooler than the wood frame houses in the states. If you are lucky enough to live on a lower floor of an apartment building, then you really don't have much to worry about when heat waves strike. But if you ... read more
Sunday Snapshots: Forgotten Tomato Recipes
Since tomato season is in full swing I thought I'd share some forgotten tomato recipes. They were both meant to be shared last tomato season but somehow got overlooked. I plan on making both of these again over the following week. Maybe I will reshoot photos for the recipes, that is if time permits. So in the mean time please excuse the not so great photos. I can only embed one recipe per post so I apologize for only having one print-out option available. Have a happy Sunday everyone! I'll be ... read more
Sunday Snapshots: Yogurt Pastry Dough
This Sunday I would like to share some snapshots of my pastry dough experiment. Enjoy! When the weather turns hot I crave light meals. Feeling hot, sweaty and eating a heavy meal on a summer day is torture to me. To avoid the heaviness of a meat meal we eat a lot of vegan and vegetarian meals, like the one in these photos. The few times I turn the oven on during summer months is usually to bake something quick like a tart or galette. Of course summer is not complete without several ... read more

38 Recipes Your Mom Will Love
Growing up my mother (or mami as we call her in Spanish) always had a warm meal ready for us. Even when she worked for long hours and on her feat all day, she made sure we had a home cooked meal. She hardly ever used processed ingredients (Mexican cooking relies heavily on fresh ingredients), and only now-and-then did we get fed fast food or take out. My eldest sister would often step in to help with the cooking and we all had assigned chores. Even so, I often wonder how mami had the energy for ... read more

Facts By now I’m sure many of you have heard about the “superfood” called quinoa. If you haven’t, today you’ll read some facts that will, perhaps, encourage you to give it a taste. Chiles of the World: 6 Chiles You Gotta Try!
I've always liked chile peppers. Some of my most vivid memories involve hot sauce being poured over chips, popcorn, or chile powder over juicy slices of fresh fruits. Even though that was normal to me, my spicy tolerance wasn't as high as my siblings. I love chile for the flavouring not to make my mouth burn. After many years of practice my heat tolerance has increased and now I can taste flavours in chile peppers that I once found to be hot and nothing more. I'm not a connoisseur, I just love ... read more
