Chipotle, Honey and Sour Orange Salmon (Served with Turmeric Mashed Potatoes)

April 24, 2014 by Nancy Lopez-McHugh 14 Comments

Chipotle, Honey and Sour Orange Salmon Served with Turmeric Mashed Potatoes by @SpicieFoodie | #salmon #chipotle #turmeric #mashedpotatoes #fusionrecipes

I love salmon. My favourite way of eating salmon is raw, as in sashimi. Next it's a close tie between lox and marinaded before grilling. A couple of days ago we went to the store and found these huge whole salmon fillets. They looked like the fish monger had just prepared them, the colour and texture was perfect! Immediately I knew that they were not only coming home with me, but how I was going to prepare them. I don't know why but when I am eating cooked salmon I like it to have a ... read more

Turmeric and Vegetable Millet: Gluten Free Side Dish

March 2, 2013 by Nancy Lopez-McHugh 43 Comments

I've grown bored with winter and am ready to move on to spring. Unfortunately, for us in the Northern Hemisphere spring doesn't officially begin until the 20th of March. That's 18 more days for the official start, and who knows how many more for the weather to begin reflecting the new season. Sigh. Instead of spending my time looking out the window searching for signs of sunnier and warmer days ahead, I find myself gravitation towards sunny food colors. Perhaps it is my impatient ... read more

I wanted to write a better post than these few mumblings, but here we are Tuesday afternoon (in Europe) and I promised you a recipe. I hope to get back on track with better articles, more recipes, photo tutorials and much more in the coming ... read more

Colorful Vegan Turmeric Rice for the IIP

December 19, 2010 by Nancy Lopez-McHugh 41 Comments

Ever wondered why many curries have a dark orangy-yellow color? Why is American mustard so yellow, or how commercial chicken broth gets a its yellow tint? Turmeric. Turmeric is a rhizome, the stem or roots of a plant that grow underground. Turmeric and ginger are in the same rhizome family. They actually look pretty much the same on the outside until you cut into it and see the ginger is a very light yellow and Turmeric is a vibrant orange color with a hint of yellow. July 17, 2015 by Nancy Lopez-McHugh 8 Comments

Apricot Crumble for Two by @SpicieFoodie | #dessert #glutenfree

You have six apricots that are beginning to soften, but you can't possibly eat them all at this moment. You really don't want to waste them, even if they aren't the best tasting apricots you've ever had. What would you do with them? Me, I decided to see what they would taste like in a cobbler. I'm so glad that I just didn't toss the apricots into the garbage because they tasted much better baked than they did raw. Crumble is a very easy dessert to prepare, so perfect for those like me ... read more

The Easiest and Quickest Way to Peel Ginger

March 18, 2015 by Nancy Lopez-McHugh 13 Comments

The Easiest and Quickest Way to Peel Ginger by @SpicieFoodie | #howto #ginger #kitchenhacks #Kitchenhowto

I love the taste and smell of fresh ginger root, don't you? It is an ingredient I always have in my fridge so that when the craving for thai curry or lemon-ginger tea hits me I can quickly get it on the stove. Yes, one could also use dried or ginger powder, but you'd be missing so much flavour. The fresh root packs an intense taste that is spicy and citrus-y, and quite nutritious too. The only downside of working with fresh ginger is that many recipes require that it be peeled before using. ... read more

How To Get Many Meals From One Roasted Chicken

October 9, 2014 by Nancy Lopez-McHugh 8 Comments

How To Get Many Meals From One Roasted Chicken by @SpicieFoodie | #chicken #budgetfriendly

A whole roasted chicken is a much loved and requested meal in this house. Being that it is I who is in charge of roasting the bird, the request is always welcomed. For me the meal involves 6 simple steps: I turn on the oven, mix up the herbs and spices, rub them on the chicken, place the chicken in the oven, wait for it to roast, and lastly serve it. (I usually stick to simple side-dishes to keep the process simple.) This meal is one that takes minimal effort, clean-up, and little attention is ... read more
