Pear, Walnut and Goat Cheese Galette
A sweet and savoury galette recipe that easy to prepare and always a hit!

  • !Ingredients For The Dough: *
  • 2 cups of all purpose flour
  • ⅓ cup of good quality olive oil
  • ⅓ cup of cold water, plus extra if needed
  • a pinch of fine sea salt
  • ½ teaspoon of granulated white sugar
  • !Ingredients For The Toppings:
  • 2 small pears or one large one, sliced into thin slices
  • a log of goat cheese (you may or may not use it all)
  • 2 Tablespoons of olive oil
  • 3 to 4 garlic cloves, finely minced
  • a pinch of dried thyme
  • ½ teaspoon of dried rosemary
  • crushed walnuts, to taste
  • one egg, lightly beaten (for egg wash)
Instructions For The Dough:
  1. Mix the flour, salt and sugar until well combined. Make a well in center and add the olive oil and water. Mix and knead into a smooth dough, if needed add a little bit more water until your dough comes together into the smooth dough.
  2. Use your hands to gather the dough into a ball, wrap with plastic wrap or place inside a plastic bag then leave to rest in the refrigerator for 30 minutes. After the half hour take it out of the refrigerator and roll it out into ¼ inch thigh circle. Place it on a baking sheet lined with baking paper and set aside.
Instructions For The Toppings:
  1. Preheat the oven to 370F. In a small pan heat up the olive oil, once hot add the minced garlic and sauté for 2 minutes -- do not allow it to burn, only to soften. Next add the thyme and rosemary and give the ingredients a good stir. Cook for a minute or two just to allow the herbs to release their scents. Turn off the heat and spread the mixture over the rolled out dough.
  2. Next crumble some goat cheese and sprinkle it over the rolled out dough, you can add as much as you like. Now arrange the slices of the pear around the centre and in a circular formation, of the dough and on top of the cheese. Sprinkle some crushed walnut pieces over the pears -- as much as desired. You want to leave an edge or space around the pear slices so that the dough can be lifted and flipped over the fruit. Take a look at the photo for a visual guide.
  3. Carefully lift up the outer dough and fold it on top of the pears, again refer to the images in the blog post for a visual guide. Continue doing this until you have folded all of the dough over the pears and created the galette. Use a pastry brush to brush some of the egg wash over the folded dough. Place the galette in the oven and bake for 25 to 30 minutes or until the crust is golden brown and feels crispy. Remove from the oven and allow to cool for 10 minutes before serving.
*Please note that this galette will also taste great if made using store-bought pie dough. The result will be different than picture, but still delicious nonetheless.

**To Make This Galette Vegan**
Instead of using goat cheese use your favourite vegan or nut cheese. And instead of using and egg wash use olive oil to brush over the dough.
