Herb Pecan Spiced Rice and Amelia's Spicing Pecans

Serves: 2-3
  • 2 cups long grain rice
  • 3-4 garlic cloves minced
  • 1 spring onion, finely chopped
  • salt and ground black pepper, to taste
  • 2-3 tbsp Amelia's Herb Spicing Pecans
  • 1.5 tbps extra virgin olive oil
  • 3 cups low sodium vegetable broth
  1. Heat the olive oil in a sauce pan, saute the garlic and onion until soft and translucent. Use low or medium-low heat to prevent garlic from burning. Add rice to the pan, salt, ground black pepper and vegetable broth. Over medium-high heat bring the pan to a soft boil. Turn heat down to low, cover and simmer for 15 minutes or until rice is soft and cooked through.
  2. Just before serving mix in the pecans until distributed throughout the rice.
  3. Serve rice as a side dish with meat of your choice, or as a vegan/vegetarian meal. I served it alongside pork. Enjoy!
