Ingredients
1 cup Black Beluga lentils, picked through and rinsed
11/2 cups of low-sodium vegetable broth or water
3 large garlic cloves, thinly sliced
1 green onion, finely chopped
2 tbsp olive oil
salt and ground black pepper to taste
Instructions
Pick through and rinse the lentils.Heat the olive oil and saute the garlic and onion until soft, about 5 minutes. Next pour the broth/water and lentils into the pot. Bring to a boil. Boil for 4 minutes then turn heat down to low flame. Cook for 20-25 minutes or until the lentils are tender. Gently stir to well combine. Season with salt and ground black pepper to taste. Allow to site a few minutes before serving.
**Do not over cook the lentils or they will split and turn to mush.
