Curried Chicken Farfalle Pasta

This recipe is a fusion of creamy western style Farfalle pasta and Indian curry spice. It is creamy and a tad spicy, plus a completely different way of eating pasta.

Ingredients
  • 1 lb. or 500g bowtiew pasta
  • 2-3 large chicken breasts, cut into bite size pieces
  • 1 medium yellow onion, finely chopped
  • 5 garlic cloves, minced
  • 1-2 tbsp vegetable oil, like olive or sunflower
  • 1 cup or 140 mg frozen peas, or adjust to taste
  • 2 cups or 480 ml cream
  • 1.5 tsp salt, adjust to taste
  • ½ tsp black pepper
  • ½ tbsp yellow curry powder, plus extra to adjust to taste
Instructions
  1. Bring water to a boil for the pasta. While the water is boiling prepare the sauce. Melt the butter in a large saucepan, saute the onion until soft and translucent. Cook the chicken pieces until cook through, then add the garlic and saute for 2 minutes. Add the salt, pepper and curry powder to the saucepan. Stir in the cream, keep stirring until well combined. Add the peas, cover and simmer under low heat until pasta has cooked.
  2. Cook the pasta according to package instructions.Once the pasta has cooked drain and set aside. Taste the sauce and adjust the spices to your taste if needed. Pour the sauce over the cooked pasta. Gently stir to evenly coat the noodles with the curried sauce. Serve with grated parmesan, bread and a small side salad.
