Simple Corn Pasta with Broccoli

A simple gluten free pasta cooked with olive oil and broccoli florets. Serve dusted with grated parmesan cheese as a side dish or as a light lunch.

Ingredients
  • one package of gluten-free 100% corn spaghetti pasta (this is my favourite brand, it's GMO free)
  • small head of broccoli, cut into small florets
  • 10 whole black peppercorns, crushed or freshly ground
  • 2 tablespoons olive oil
  • sea salt to taste
  • parmesan cheese
Instructions
  1. Boil a pot of salted water and cook the spaghetti according to package instructions, drain and set the noodles aside. In the same pot you've cooked the noodles heat the olive oil, once warm sauté the broccoli to desired tenderness. Next add the freshly crushed/ground peppercorns and cook for another two minutes. Next mix in the cooked noodles and stir until the broccoli is well distributed. Sprinkle in a bit of sea salt and stir.
  2. Serve as a side dish or a light lunch. Right before serving dust with grated parmesan cheese. Enjoy!
