How Do You Like Your Egg Salad? And My Spicy Egg Salad with Chipotle Pepper
This past Friday was World Egg Day. Did you know such a day existed? I didn’t, but now I’m glad I know. I love eggs so it’s great to have a day to celebrate them.
In honour of this year’s egg day I made a spicy version of my classic egg salad recipe. Normally I stick to my very basic and traditional recipe, but now and then I like to spice up our egg salad.
Of course when making egg salad we must first prepare perfect hardboiled eggs. I have a fantastically easy method that always yields eggs with a golden yolk, and never ones with that unappetising greyish-green ring around the yolk.
