Do you ever end up with too many dried chiles? I somehow always end up buying too many bags of them. This isn’t necessarily a bad thing because then I always have plenty of peppers to spice up our meals. The only drawback to a pantry full of dried chilies is that they risk going to waste. You see, as I’ve been learning, here in the Tropics food goes bad quickly. When I lived in Europe I never once had to worry about the weather destroying my dried pantry food. But now that I live in a place that is always hot and always humid, this is something I always have to keep in mind.

The other day I was cleaning out the pantry and noticed one too many bags of dried chile de arbol, but thankfully I was also running low on red curry paste. So I gather my chilies and other ingredients and I made a batch of homemade red curry paste. Problem solved!
