You know that little bottle of yellow curry in your spice rack that you just can’t seem to use up? Well, go get that bottle because you’re going to need it for this super easy and delectable curry recipe.

Aloo gobi (or aloo ghobi) is a classic Indian dish that everyone should not only eat but also cook, at least once in your life. But don’t worry as it is so easy that even the absolute beginner cook can make it.

Normally I use my homemade garam masala (it’s an aromatic spice mix used for making many Indian dishes) when I prepare aloo gobi, but lately I’ve been using just the ordinary yellow curry powder from the store and the results are fantastic.

The curry is a vegan dish that you can enjoy for Meatless Monday or really any day of the week. If you just can’t live without meat you could instead serve this curry as a side dish or toss in some cooked chicken breast — but you really don’t need it, veggie as is is amazing.

  1. I have been meaning to make aloo gobi for a while now… and i even have cauliflower in my fridge calling out to me! Will have to try this out. :)

  2. Looks absolutely delicious. Because of the huge vegetarian population in India, the vegetarian dishes turn out to be much better that the meat ones. Of course you have numerous coastal and mughal dishes too which are primarily non-vegetarian.
