Breakfast Yogurt with Lingonberry Jam and Oat Crackers with Goat Cheese and Lingonberry Jam

November 18, 2014 by Nancy Lopez-McHugh

Swedish Lingonberry Jam by @SpicieFoodie | #lingonberry #goatcheese #glutenfree

Previously I shared the recipe for Sweden’s national dish: Swedish Meatballs in a Creamy Sauce with Mashed Potatoes, and Lingonberry Jam. The meal was a huge hit and we can’t wait to eat again soon.

You may remember that I stated that the recipe for the homemade lingonberry jam yields a big portion. So today I’d like to share great ways to use up the extra jam.

The first and my favourite use for leftover lingonberry jam is on top of crackers. For snack time I grabbed some oat crackers, smeared them with goat cheese, and dropped a spoonful of lingonberry jam on top. The taste was an expolsion of awesome flavours in my mouth. It was tart, sweet, salty, and creamy. It was so good that I couldn’t stop myself from eating them, luckily I ran out of crackers.

The second use for the jam is in yogurt. One morning I topped my homemade greek yogurt with the jam. I then mixed it into the yogurt. Another hit! The creaminess of the yogurt compliments wonderfully with the lingonberries.

Lastly, lingonberry jam may be used alongside meat dishes, as a topping, or even as a filling for pastries. Think of all the great ways you can use cranberry sauce and the same applies to lingonberry jam. The possibilities are endless.

i don’t have access to lingonberries but i do have a shelf full of sour cherry jam that is not getting eaten at the rate i’d like. it would go perfectly with goat cheese and crackers, and i bet my toddler would love it! thanks for the idea!

I’d like this on ice cream and a smear on a piece of pound cake would be wonderful!
